Quick and Easy Chinese Recipe
Happy Chinese New Year!
The Chinese New Year this year is from last Thursday (15th of Feb) until the 1st of March. As a University student surrounded by so many international students, how do you surprise your Chinese friends at a Chinese New Year party? How about trying to make them something that tastes like home?
This recipe will introduce an easy and quick recipe for traditional delicious Chinese Cushion: Tomatoes and Eggs Stir Fry!
Ingredients:
- 2 tomatoes, diced
- Oil
- Range free eggs
- Green onion, chopped
- Salt
Step 1: Beat eggs together, add half of the chopped green onion and salt inside the egg bowl and mix them together
Step 2: Add oil to the pan, heat up oil (Tip: be aware of any water that is inside the pan before you pour the oil inside)
Step 3: Pour the mixed eggs inside the pan, cook the eggs until they are almost done (Tip: leave the eggs in the pan and don't chop them, the same way as you would make an omelette)
Step 4: Take out the cooked eggs into a spare bowl.
Step 5: Add more oil into the pan, heat up, put tomatoes inside and keep stir frying the tomatoes until the tomatoes juice starts to come out (Tip: It is better to choose tomatoes such as beef tomato, which has more juice inside)
Step 6: Put eggs back to the pan and stir them together
Step 7: Serve and enjoy!
!you can also add some extra green onion as a topping to make it looks even better!
